We absolutely love this time of year! The festive season delivers an abundance of delightful stone fruit from all around Australia. Furthermore, it’s the perfect accompaniment in a healthy snack like the one below! We’re talking about I.M. SWEET Australia apricots from the beautiful Goulburn Valley. Dasha and Sherie Sherif are excited to know that the wonderful Nutritionist and Super-Mum Casey-Lee of Live Love Nourish has worked her magic creating a scrumptious treat you can enjoy anytime of day.
- White chia seeds – 5 Tbsp
- Coconut milk or almond milk – 1/2 cup
- Coconut water (or additional milk) – 1/2 cup
- Canned coconut milk – 1/2 cup
- Honey or maple syrup – 1-2 tsp (optional)
- Vanilla coconut yoghurt – 1/2 cup
- Fresh I.M SWEET apricots
- Coconut flakes
Firstly in a mixing bowl combine chia seeds with coconut milk, coconut water, canned coconut milk and optional honey. Allow to stand for 5 mins. Seeds will sweep. Stir again and sit for a further 15 minutes. Meanwhile, slice fresh apricots. Toast coconut flakes in frying pan for 1-2 mins, frequently tossing so they don’t burn. After that, allow to cool.
Layer your serving cups with chia pudding, apricot, additional chia pudding and top with a generous dollop of coconut yoghurt. Lastly, finish with fresh apricot slices and garnish with coconut flakes.
Serve chilled. Keep refrigerated.
