The power couple behind Just Flavour, popped up on my radar over our shared love for healthy Aussie produce. Fast forward to today and it is more than our mutual love of fresh produce. It’s their irresistible delicious, home-made chef curated artisan seasonings this dynamic duo has created.
Chef Karol brought a bit of spice into the Divine Fruits world, and right then, I knew it would be a wonderful collaboration…. With a little help from some other amazing local businesses from Far North Queensland our friends at Jonsson’s Farm Market, helping us to get I.M. SWEET Australia apricots into her hot little hands.
Chef Karol using her artisanal seasonings and creative flare prepared a Moroccan Apricot Chicken to “rival” any other. Just Flavour’s no nasties approach on their products really aligned with my love for good healthy food.

The Sherif Family of IM SWEET Australia

From humble beginnings 74 years ago in the gorgeous setting of the regional city of Shepparton, located along the banks of the Goulburn River in Victoria, lies the Sherif Family Orchard.
This wonderful family, are passionate about one of the most aromatic of stone fruits, the I.M. SWEET Australia apricots. Yes, folks they are sweet and have that real apricot flavour.
The original 34-acres of land, was hand-sewn using no machinery to cultivate vegetables including tomatoes, peas and beans. Back in the day the family relied on horse-drawn ploughs and back breaking manual labour. The growers were committed to deliver fresh premium quality produce. No matter how labour intensive it was..

In 1954, the Sherif’s decided that they would diversify into growing fruit trees. The first among those were a number of flavoursome peaches, apples, pears and apricots. The majority at the time was used for the canning industry at SPC, amongst other local canneries. Today the family predominantly grows apricots along with apples, pears and plums.

Dasha alongside his wife Sherie and father Lex, and countless other hard-working individuals are responsible for those delicious I.M. SWEET Australia apricots, that are a household favourite.

Apricots in their varying varieties are a velvety and sweet fruit that can be enjoyed raw and cooked in savoury dishes (like this amazing Moroccan Apricot Chicken recipe) or created into scrumptious desserts.

Apricots

They contain loads of antioxidants and vitamins A and C, minerals such as potassium and manganese, and dietary fibre just to name a few. The I.M. SWEET Australia apricots are at their peak and available at a local green grocer between November and February.
Apricots really are a healthy snack. Who else believes their child should enjoy a delicious snack at school? I know I do. Although typically a favourite in desserts, this fruit is so versatile and is not limited to the sweet dishes.
Do you enjoy dried apricots? Another go-to treat that can also be used along with spices to infuse their flavour into many savoury dishes, particularly in the Middle Eastern cuisine.

Fun Fact: Apricots were believed to originate in Europe and the English brought them to Australia during the times of the First Fleet. Victoria is now one of the main producers of apricots in the world.

Recipe

Serves 6
Prep time: 15 minutes
Cook time: 50 minutes

Ingredients

¼ kent pumpkin, peeled and cubed
1t olive oil
6 chicken thigh cutlets (approx. 1.2kg)
1 onion, diced
4 garlic cloves, finely diced
1t ginger, grated or minced
1 red capsicum, sliced
1t JF Moroccan
2t honey
5 medium tomatoes, diced
6 fresh apricots, stone removed, sliced
½ cup dried apricots
1 cup chicken stock
½ lemon, thinly sliced
Toasted flaked almonds for garnish
Couscous or rice to serve

Method

Pre-heat oven to 180°c. Prepare pumpkin and cut into larger pieces to prevent over cooking, then place into a large baking dish.
Heat oil in a pot and sear chicken on all sides for a few minutes until brown. Place into the baking dish with the pumpkin.
Heat pot to medium and saute onion, garlic, ginger and capsicum for a few minutes until softened.
Add JF Moroccan, honey, tomatoes, fresh and dried apricots, chicken stock and lemon slices.
Bring to a boil and gently simmer for 10 minutes. Adjust seasoning with salt and pepper.
Pour over the chicken and bake for 30 – 40 minutes.
Serve with toasted almond flakes, couscous or rice, enjoy!
