The plums are juicy and come in a variety of colours black, red and dapple skinned with a red flesh. Yes we have over indulged this season, you just can’t stop at one. We cannot wait to entertain our family with this amazing Plum Crumble Cake this Christmas.

Ingredients

Crumble topping

1 cup packed light or dark brown sugar
1/2 cup granulated sugar
1T ground cinnamon
1/2 t salt
1 cup (230g) unsalted butter, melted
2 & 1/2 cups all-purpose flour

Cake batter

2 & 1/2 cups all-purpose flour
1 t baking soda
1/2 t baking powder
1/2 t salt
3/4 cup unsalted butter, softened to room temperature
1 & 1/4 cups granulated sugar
3 large eggs
1 cup sour cream
2 t vanilla extract
5 plums (diced)
1/4 t ground cinnamon

Crumble Topping

  1. Preheat oven to 177°C and grease a 9×13 inch baking pan, line with parchment paper.
  2. Mix the sugars, cinnamon and salt in a bowl, stir in the melted butter. Using a fork, lightly mix in the flour until crumble forms. Don’t over-mix.

Batter

  1. Whisk the flour, baking soda, baking powder and salt together.
  2. Beat the butter and granulated sugar until smooth and creamy.
  3. Add eggs, sour cream and vanilla until combined.
  4. With the mixer on low speed add the dry ingredients and do not overmix. The batter will be thick.
  5. Spread the batter evenly into pan and add diced plums on top.
  6. Using a spatula press the crumble down into the cake so it sticks.
  7. Bake for 45-55 minutes or until golden brown.
  8. Allow to cool for 30-45 minutes before serving.
