Customers have been loving the sweet stone fruit coming from Kumbia in the South Burnett Region. The fruit is so versatile it can be used in a number of recipes! There is only a few days left of Kumbia fruit so head to your local green grocer to get your hands on some now! This recipe is by Nutritionist Casey-Lee Lyons from www.livelovenourish.com.au. It is gluten free and dairy free friendly. Casey-Lee has enjoyed cooking with the Kumbia fruit and the delicious aromas it gives whilst cooking! Spicy Chicken Bowl with Peach Salsa

Prep: 20 minutes Serves: 4

Ingredients:

4 chicken breasts
2 tbsp extra virgin olive oil + extra for cooking
1 tsp chilli powder
3 tsp cumin
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Pinch salt
4 large Kumbia peaches, diced
1 avocado, diced
1/4 cup fresh coriander, chopped
Juice of 1/2 lime
2 cups cooked quinoa, brown rice or gluten free grain of choice
2 corn kernels, chargrilled
1 cup cherry tomatoes, halved
2 cups fancy lettuce/ rocket
Fresh coriander & sliced chilli to serve Fresh lime wedges so serve.

Method:

  1. Combine spices together. Rub each chicken breast with olive oil and coat with spice mix. Set aside.
  2. Cook quinoa and corn and set aside.
  3. Prepare salsa by gently tossing peaches, avocado, coriander and lime juice.
  4. In a frying / grill pan, cook chicken breast evenly on both sides until cooked through. Slice thinly.
  5. Arrange each bowl with 1/2 cup cooked quinoa, leafy greens, tomatoes and corn. Add sliced chicken and finish with peach salsa.
  6. Serve with fresh coriander, chilli and lime wedges.
