Granite Belt Growers

We thought you might be interested to know a little about the producers. Stone fruit growers Duncan and Dinie Ferrier began developing Rosemary Hill Orchard in the heart of the Southern Downs and Granite Belt region in 1996. The family started with a block of 1000 stone fruit trees and a 10-acre vineyard. In 2010, their second son Angus returned home to join the family business. The orchard by this stage encompassed more than 11,000 fruit trees. Today it boasts around 18,000 trees with all of the scrumptious Summer fruits including nectarines, peaches and the MONTAGUE tree™️plums we’ve all come to know and love.
There’s not just one family that grows these refreshing Summer treats. Pictured here are Stanthorpe growers Andrew and Graham Finlay. Alongside their families, in 1984 these passionate growers planted their first stone fruit trees. That was the beginning of Pikes Creek Orchard. From those initial days and first few trees, the orchard has now grown comprising of more than 14,000. Both families’ fruit trees suffered due to the drought and they now have less trees in the orchard however the good news is that more trees have been planted.

For both of these families their grounded honest and authentic approach to farming is what has kept their passion alive. Along with a mixture of shallow soils, warm days, cool nights and a pristine environment that is the Granite Belt. Recipe – serves 4

Pancake batter
225g plain flour
1t baking powder
Pinch sea salt
300ml full cream milk
2T natural yoghurt
1 egg beaten
Oil
250g ricotta
1 plum pureed (make 2T)
1T caster sugar
1T cinnamon
3 plums finely sliced
Golden syrup or syrup of your choice

Method

  1. Stir the flour, baking powder and salt in a large mixing bowl. Make a well at the bottom.
  2. Combine the milk, yoghurt and egg in a separate bowl and whisk, then pour slowly into flour mix stirring gently with a wooden spoon to avoid any lumps.
  3. Cover, allow to stand for 30 minutes in the refrigerator.
  4. Mix the ricotta, castor sugar, cinnamon in a mixing bowl and refrigerate for 15 minutes.
  5. Drizzle some oil in the pancake pan and bring to heat.
  6. Scoop pancake batter into the pan to your desired size and cook for a couple of minutes or until golden. Cook more pancakes until there is no batter left.
  7. Layer each pancake and fill with ricotta mix. Add slices of fresh plums, plum puree and drizzle some golden syrup. Enjoy every bite!!
